Beef brisket is a large, primal cut of meat from the lower chest or breast of a cow, between the shoulders and above the front shanks. It's made up of two overlapping muscles, the point and the flat, which are joined at the ribs:

  • Point

    The thickest section, which is often fattier and marbled, and sometimes called "fatty brisket"

  • Flat

    The thinner, more uniform section, which is leaner and sometimes called "first cut"
